Fried eggplant with creamy soy sauce Jakarta style
Ingredients :
4 eggplants, 500 g
200 ml cooking oil, for frying
3 shallots, 30 g
2 cloves garlic, 10 g
3 red chillies, 30 g
3 candlenuts, 15 g
1 tsp fried trassi, 5 g
1 tsp salt, 4 g (or to taste)
2 Tbs sweet soy sauce, 20 ml
Method :
- Cut each eggplant lengthwise. Fry until tender and brownish. Drain.
- Make shallots, garlic, red chillies, candlenuts, trassi, and salt into a paste. Stir fry with 3 Tbs rest of oil until aromatic. Add sweet soy sauce. Continue stir frying for 5 minutes more. Take from flame and when serving pour sauce over fried eggplant.
